Sorghum is considered an ancient grain and is used to produce sweet syrups, fermented beverages such as sorghum beer.  Most recently, however, sorghum flour has become popular for its use in gluten-free items due to its inherent gluten-free nature, slightly sweet flavor, smooth texture and light color. Sorghum flour is often used as a substitute for wheat flour and is ideal for making bread, pancakes, and can also be used to substitute for other grains to make cookies, cakes, muffins, and more.
