Baking powder is a double acting leavening agent used to help baked goods rise and develop a light, airy texture. Double acting baking powder contains two types of acids that react at different stages, first when mixed with liquid, and again when exposed to oven heat. How Double Acting Baking Powder Works

First Reaction

When combined with moisture, the first acid activates and releases gas to begin the rising process.


Second Reaction
