Malted barley flour is made from barley that is malted, steam-dried, hulled, then ground, and sifted. Malted barley flour is used in bread, pizza crusts, crackers, rolls, pretzels, etc as a dough conditioner. Malted barley flour is lower in gluten so it causes the dough to be softer and gives a softer crumb texture.
