BLUEBERRY LAVENDER MIDNIGHT BATS
DESERTS

Ingredients
Yogurt gelato base:
- 4,000 g prepared MEC3 Gran Base
- 160 g MEC3 Yoghin
Swirls and finish:
- MEC3 Blueberry Topping, as needed for the berry layer and surface ribbons
- MEC3 Quell’Altra, as needed for the second swirl
- Lavender Color, as needed to tint the Quell’Altra purple
- Chocolate bat decorations, as needed for the display pan or individual servings
Directions
- Prepare the MEC3 Gran Base according to the directions on the package, then weigh 4,000 g of it into a clean mixing container.
- Add 160 g MEC3 Yoghin and blend until smooth and fully incorporated. Follow the products’ resting instructions before freezing.
- Place MEC3 Quell’Altra in a separate bowl. Add a small amount of Lavender Color and mix thoroughly, then continue adding color gradually until the shade reaches the purple you want, following the color product’s usage directions. Keep this mixture away from the yogurt base.
- Pour the yogurt mixture into the batch freezer and process using your normal settings for a prepared yogurt gelato base.
- Extract a layer of gelato into the display pan. Drizzle MEC3 Blueberry Topping over it in ribbons rather than covering the whole layer.
- Spoon or drizzle the tinted Quell’Altra alongside the blueberry ribbons. Alternate with more gelato, blueberry topping, and purple swirl until the pan is filled.
- Draw a spatula gently through the layers with just a few passes. Avoid overmixing so the blueberry and purple ribbons stay visible and distinct.
- Reserve a little blueberry topping and tinted Quell’Altra for the top, then add sweeping ribbons across the surface to create the midnight look.
- Harden the gelato using your usual process. Add the chocolate bats before display or serving, positioning them at different angles so they appear to fly across the purple swirls.
