These Farmer Cheese Latkes are deliciously crisp on the outside and soft on the inside, with a subtly sweet and creamy flavor. Ingredients

4 eggs

8 ounces farmer cheese

3 Tbsp sugar

1 tsp vanilla extract

3 Tbsp oil or margarine

Dash of salt

⅓ cup matzoh meal

½ cup oil for frying
Directions
Beat eggs in a large bowl. Add all remaining ingredients except matzoh meal and frying oil. Mix until well blended.
Add matzoh meal and mix until smooth.
Heat ½ cup oil in a skillet.
Using a large spoon, drop batter into the hot oil. Fry for 5 minutes on each side, or until lightly browned.
Continue until batter is used up, adding oil when necessary.
Recipe Note
Variation:
Raisins or chopped berries may be added for extra flavor.
Use: 10-inch skillet
Yields: 12 pancakes
