Same protein, two shapes, and a recipe that assumes you know which one it means. One sets glass-clear. The other is a common grocery item. Here is how to move between them without wrecking the texture.
Sheet gelatin and powdered gelatin are the same protein. Collagen, processed and dried, then either ground into a powder or pressed into flat leaves. What changes with the format is how you measure it, how it dissolves, and how the finished set looks and tastes. Neither is stronger by nature. A recipe works with either, once you know how to move between them.
The short version, before the detail: sheets set clearer and taste cleaner, and you dose them by counting. Powder is cheaper, commonly stocked in grocery stores, and you dose it by weight or spoon. Most of the confusion in the middle comes from one word, bloom, and from recipes that forget to tell you which form they were written for.
Both set a dessert. The decision is what the dessert needs to look like, how much precision the recipe demands, and what you can actually get your hands on.
Bloom is gel strength, named after the man who invented the test, Oscar T. Bloom. Higher number, firmer set. Most culinary gelatin runs somewhere between 120 and 265 bloom, and that range is the reason two gelatins of equal weight can set to different firmness. Weight alone does not tell you how firm the result will be. Bloom does.
This is the part that trips people. A recipe calling for "10 grams of gelatin" is only complete if you also know the bloom the author used. Match the weight but miss the bloom and you get a mousse that sets like a gummy bear, or a panna cotta that will not hold a shape. Sheet gelatin comes in grades with metal names: bronze, silver, gold, platinum, and sometimes titanium. Each grade corresponds to a bloom range. Bronze is the softest, platinum the firmest and clearest. Here is where the European system does something clever.
The manufacturers vary the weight of each sheet to compensate for its strength. A bronze sheet is made heavier, a platinum sheet lighter, so that one sheet of any grade delivers roughly the same setting power as one sheet of any other grade. That gives you the golden rule that makes sheets so forgiving: if a recipe calls for three gold sheets and all you have is silver, use three silver sheets. Do not do the math. The weight difference already did it for you.
That only holds when you count sheets. The moment a recipe measures sheet gelatin by weight instead, the 1-to-1 rule breaks, because now the different weights matter again. Weight-based swaps between grades need a real conversion, and this is where a lot of otherwise careful bakers go wrong.
Counting sheets: one grade swaps for another one-for-one, no math. Weighing sheets or working from powder: bloom and weight both matter, so you convert. The trouble starts when someone mixes the two systems in one recipe.
This is the reason pastry kitchens keep sheets around even though powder is cheaper. Sheet gelatin, especially the higher grades, produces a more transparent, cleaner-tasting set. Powder can leave a faint cloudiness and sometimes a slight animal note, the kind of thing you would never notice in an opaque mousse but would spot instantly in a clear glaze or a jelly meant to show light through it.
The clarity tracks with grade. Platinum and gold, the higher blooms, throw the clearest gel with the cleanest flavor, which is why a mirror glaze or a consommé leans on them. It is a purity-of-processing story more than a form story, but sheets are where the high, clear grades live, so in practice the choice of sheets is often really a choice of clarity.
If the finished dessert is opaque, a cheesecake, an opaque cream pie, most of the gummy world, that clarity buys you nothing, and powder does the job for less. Save the sheets for where the eye can see through the set.
Both forms have to hydrate before they melt in, a step called blooming, but they go about it differently and the difference matters for your liquid math.
Sheets are soaked in cold water for five to ten minutes, lifted out, and squeezed. Because you wring them, they carry almost no extra water into the recipe. Powder is different. It gets sprinkled over a measured amount of cold water and left to swell, and all of that water goes into the dish. If you swap powder into a recipe written for squeezed sheets and forget to subtract that hydration water from the main liquid, the dessert has too much liquid and may not set. That single oversight causes more gelatin failures than bad conversions do.
One rule holds for both, and it is not optional. Never boil gelatin. High heat destroys its setting power, so it dissolves into warm liquid, never a rolling boil.
The swap that quietly fails: replacing squeezed sheets with bloomed powder and leaving the recipe's liquid untouched. Powder brings its blooming water along, roughly five times its own weight. Subtract that amount from the milk, juice, or water in the base, or the set comes out soft or not at all.
You can swap sheets for powder and back. What you cannot do is trust a single clean number for every case, because bloom sits underneath the conversion and different products carry different bloom.
The rough working figures, useful for a home-scale dessert where a little softness will not ruin anything: a standard packet of powder, around 7 grams or a tablespoon, roughly equals three to four sheets, depending on grade. For anything where texture is the point, a plated dessert, a product you sell, a shaped set that has to hold, do not lean on the rule of thumb. Check the bloom of both your sheet and your powder and convert from there, because the rule-of-thumb error compounds fast in a firm set.
Here is the honest caveat: the tidy "one sheet equals X" numbers you find online disagree with each other, and they disagree because they are quietly assuming different bloom values. That is not sloppiness so much as the nature of the thing. The only conversion that is reliable across products is one that starts from the actual bloom of what you are holding.

None of these is a verdict on its own. A clear glaze pushes you to sheets; a bulk gummy run pushes you to powder for cost; a recipe that measures by weight makes powder simpler to dose accurately. The factors pull in different directions, which is why the right answer changes with the dish.
Once you know what each form is good at, the pantry decision gets simple.

Consistency across a team. When different people make the same product on different days, counting sheets removes a scale from the equation and with it a source of error.
