Baker’s Authority is proud to supply Merckens Rainbow Line coatings, a versatile option for confectionery creations. These colorful wafers, available in flavors such as vanilla, chocolate, and butterscotch, are easy to melt and use in molding, dipping, drizzling, and decorating. Because they are compound coatings, no tempering is required. Simply melt, cool to the right temperature, and apply.

To help you get the best results, Baker’s Authority is sharing this detailed guide to handling, melting, coloring, cooling, and storing Merckens Rainbow Line coatings.

Before You Begin

  • Temperature control is essential. The recommended working range is around 102°F. Always stay above 98°F and do not exceed 120°F.

  • Keep water away. These wafers are oil-based, and direct contact with water will affect performance. Make sure all tools and surfaces are completely dry.

  • Use a candy thermometer. Consistent monitoring of temperature helps prevent common handling issues.

Melting Methods

There are two recommended approaches for melting Merckens Rainbow Line coatings.

Microwave Method

  1. Place wafers in a microwave-safe bowl.

  2. Heat for 30 seconds on medium-high, then stir.

  3. Continue heating in 15–30 second intervals, stirring after each one, until the wafers reach 115–120°F.

  4. Allow the coating to cool slightly to 98–102°F before using.

Wafers may appear solid until stirred, so always mix well between intervals. A microwave with a rotating carousel reduces the risk of burning.

Double Boiler Method

  1. Heat water in the bottom of a double boiler to a gentle simmer.

  2. Place wafers in the top pan or bowl, making sure steam or water does not touch the coating.

  3. Stir until melted, keeping the coating at 115–120°F.

  4. Cool to 98–102°F before use.

Coloring Options

The Rainbow Line includes a wide range of shades, but custom colors can also be created.

  • Mix different colored wafers to achieve unique tones.

  • Use oil-based candy coloring, adding a small amount at a time.

Avoid water-based coloring, which can cause the coating to thicken.

Cooling Techniques

Proper cooling helps maintain gloss and texture.

  • A cooling tunnel with airflow is ideal.

  • If a tunnel is not available, place creations in a cool area (45–65°F) with low humidity and airflow.

  • Items can be placed in a refrigerator for cooling but should not remain inside for extended periods, as condensation may form.

  • Do not use freezers.

Room temperature cooling is not recommended, as colder environments help coatings set properly.

Storage Guidelines

  • Store wafers in a cool, dry, odor-free environment.

  • Avoid refrigerators and freezers, as condensation can develop when wafers return to room temperature.

  • Keep wafers sealed and away from items with strong odors such as onions, candles, or detergents.

Troubleshooting

Bloom

If coatings develop a dull white film, this is known as fat bloom. While appearance is affected, the product remains safe to use. Re-melting will reincorporate the surface fat.

To reduce bloom risk, use the correct melting and working temperatures and cool coated items in a 45–55°F environment with airflow.

Thickening

Over time, coatings may absorb moisture, making them thicker.

To thin them:

  1. Melt palm kernel oil (PKO) to about 120°F, or use Paramount Crystals.

  2. Heat coatings to 110–115°F.

  3. Add ¼ ounce of melted PKO per pound of coatings and mix thoroughly.

  4. Repeat in small increments if needed, without exceeding 120°F.

This restores fluidity without damaging the coating.
