The main difference between bread flour and all-purpose flour is a matter of protein. Bread flour, which comes in white and whole wheat varieties, has a higher protein content than all-purpose, usually 10%-13%. The reason for it being called bread flour is because of its high protein content, which most breads need. Bread flour is recommended to replace all-purpose flour when you want to bake food that is chewier, like bread or pretzels, but is not a good replacement for baked goods that are soft and fluffy, like cakes.
