Ingredients

6 eggs, separated

2 cups sugar

2 cups flour

3 tsps. baking powder

- 1 Tbsp. instant coffee

1 tsp. vanilla extract
- 1 cup water
- 1 cup chopped walnuts or pecans (optional)
Directions
- Preheat oven to 350°.
- In medium mixer bowl, beat egg whites and salt at high speed until foamy. Gradually add ½ cup sugar, continuing to beat until stiff peaks form. Set aside.
- In medium mixer bowl, add egg yolks and remaining ingredients, except nuts. Blend at low speed until moistened, then beat 1 minute at medium speed, scraping bowl occasionally. Fold egg whites into mixture until well combined. Fold in nuts. Pour batter into ungreased 10-inch tube pan.
- Bake for 55 to 60 minutes or until top springs back when touched lightly in center. When done, immediately invert pan on soda bottle. Cool at least 3 hours. When cool, loosen edges and remove cake from pan.
