Ingredients

1 ¼ cups flour

¾ cup yellow cornmeal

¼ cup sugar

4 tsp. baking powder

½ tsp. salt

1 cup milk

⅓ cup oil
-
1 egg
Directions
Preheat oven to 400°F.
Grease muffin pan or line with paper liners.
Mix dry ingredients together in a large bowl until well blended.
In a second bowl, mix milk, oil, and egg, then add to the flour mixture. Stir just until blended. The mixture will be lumpy.
Fill muffin cups ⅔ full. Bake for 20 to 25 minutes or until brown.
Recipe Note
Variation:
Berry Muffins: Fill lined muffin tins with batter. Add 1 teaspoon raspberry jam to the middle of each cup, and top with batter to fill ⅔ full. Bake as directed above.
