Two cartons, same shelf, wildly different results in the freezer. One gives you a base that scoops clean at service. The other gives you something lighter that wants to be eaten right away.

Fat Is the Whole Argument

Heavy cream and half-and-half are separated by one number, and the FDA sets it. Heavy cream has to carry at least 36 percent milkfat. Half-and-half sits between 10.5 and 18 percent. Everything a frozen base does after that, how hard it freezes, how it melts on a plate, whether it scoops or resists, traces back to that gap.

Both make ice cream. That is worth saying plainly, because the comparison usually gets framed as one right answer and one mistake, and it is neither. Heavy cream gives you a dense, rich product that holds up in a display cabinet for days. Half-and-half gives you a lighter, cleaner-tasting one that is best eaten soon after it is made. A formula can use both, or use one and build the rest of the structure with milk solids and stabilizer. The decision is what you are making and how long it has to survive, not which carton is better.

The reason any of this happens is water. Fat does not freeze into crystals; water does. Swap in a lower-fat dairy and you have added water to the formula whether you meant to or not, and that water finds other water and grows into the crystals you can feel on the tongue. So the working question is not which one tastes better. It is how much water you are willing to put in the mix, and what else you plan to do about it.

What the Cream Is Actually Doing

Fat globules get in the way. That is the whole mechanism, stripped down. During churning, those globules partially destabilize and build a network through the base, and that network does two jobs at once: it traps air, and it physically interrupts the ice crystals trying to grow. The result reads on the tongue as smooth and coats the palate for a beat after the bite.

High-fat bases also hold their overrun better. Same machine, same run time, different yield, purely because fat gives whipped air something to hold onto. For an operation costing out product by the gallon, that matters more than the texture conversation usually admits.

There is a ceiling, though. Push past roughly 20 percent and the mouthfeel turns waxy, flavor release drops off because fat mutes aromatics, and you start fighting a different problem. Over-spin a high-fat base in a fast machine and you can pull out grainy little butter specks. That is the fat network going too far and coalescing. A base landing around 15 to 20 percent butterfat scoops clean and reads rich without turning heavy. Straight heavy cream overshoots it. Straight half-and-half falls short. The blend is the usual way into that window.

The Case for the Lighter Carton

Half-and-half is not the loser here, which is the part most comparison articles get wrong. Less fat means less flavor masking, and for a base where the flavor is the point, a delicate vanilla, a bright citrus, a tea infusion, the extra butterfat can work against you. It coats the palate and softens the top notes you paid for.

It also freezes harder and faster, which is fine if the product is going out the door in the next twenty minutes. Soft-serve style, blend-and-freeze desserts, anything eaten on the spot. Where the math turns is storage. A low-fat base sitting in a cabinet through a few temperature swings will grow crystals you can feel, and by day three it is a different product than what you made. That is the trade.

Can One Stand In for the Other?

Yes, in both directions, and the swap is common enough that it deserves a straight answer rather than a hedge. Each one is the better choice for a different job, so the useful question is which job you are doing.

Reach for half-and-half when the flavor is the point. A delicate vanilla, a citrus, a tea infusion, anything where you want the top notes forward. Lower fat lets those read more clearly, and it brings your cost per gallon down at the same time. It suits product that moves fast, made-to-order and soft serve especially. It freezes harder, scoops with more resistance straight from the freezer, and shows crystals sooner in storage, so a batch sitting three days in a cabinet is not where this one shines.

Reach for heavy cream when the product has to last. Display cabinets, anything facing a few temperature swings before it sells, anything where richness is the selling point. The fat builds a network that blocks crystal growth and holds overrun, which is why the scoop still looks right at the end of the day. It costs more per gallon, and there are two ceilings to respect: too much butterfat can start covering delicate flavors, and a fast machine run too long will churn the base into butter.

Or split the difference. Neither carton alone puts you in the 15 to 20 percent window. An even blend of heavy cream and half-and-half does, and so does roughly two parts heavy cream to one part whole milk. Those ratios exist because the middle is where scoopability and flavor clarity both hold up.

One case where only heavy cream works: anything asking the dairy to whip into stiff peaks before it goes into the base. Half-and-half does not carry enough fat to build that structure, regardless of technique or equipment. Building the Number Without Buying More Cream

Here is the piece most home-scale advice skips entirely. You do not have to hit your fat target with liquid dairy alone, and at volume, you probably should not.

Milk solids-not-fat, the protein and lactose fraction, does real structural work. It binds free water, which is exactly the water that would otherwise become ice. Adding nonfat dry milk powder raises total solids without adding a drop of liquid, and it is a standard move in commercial formulation for that reason. Most balanced formulas run MSNF somewhere in the 8 to 11 percent range. Go much past that and lactose starts crystallizing out, which reads as a sandy texture, so it is a lever with its own ceiling.

Sugar type is the other quiet lever. Dextrose is only about 70 percent as sweet as sucrose but depresses the freezing point more aggressively per gram, so swapping part of your sugar for it softens the finished product at cabinet temperature without making it sweeter. It is the lever to try before adding more cream when the goal is a softer scoop.

None of these operate alone. A half-and-half base carrying good stabilizer and correct milk solids can outperform an all-cream formula that has not been balanced for solids and sugar, and a rich base run too long in a fast machine will churn into butter no matter how good the numbers looked on paper. Running a display cabinet. You need holding power, so fat and stabilizer both. Heavy cream as the base, nonfat dry milk for solids, and a stabilizer blend to protect against the heat-thaw cycle every cabinet puts product through. This is the formula that still looks right at 4pm.

Made-to-order or soft serve. Lighter works well here and arguably better. The product never sits long enough for crystals to become a problem, and the lower fat lets the flavor read clearly. Spend the savings on better flavor components instead.

A Few Questions Bakers Ask

What fat percentage should I actually target? Somewhere in the 15 to 20 percent range for a scoopable, rich product. Gelato traditionally runs lower, closer to 4 to 9 percent, which is part of why it is served warmer and denser. Neither number is a rule so much as a starting point for your own machine.
Why did my base turn into butter chunks? Over-churned, too much fat, or both. The fat globules that normally form a helpful network kept going and coalesced into actual butter. Fast machines make this easier to do than slow ones. Shorten the run or drop the fat a couple of points.
Is heavy whipping cream the same thing as heavy cream? And what about light cream and whipping cream, do those work? Heavy cream and heavy whipping cream are the same product with two labels, so no concern there. The other two are different animals. Whipping cream, without the "heavy," can run as low as 30 percent fat, and light cream sits between 18 and 30. Both will make ice cream. Both will land you at a lower final fat percentage than a recipe written for heavy cream assumes, so check the carton rather than the shelf position, because stores put all four right next to each other and the labels blur together fast when you are moving.
Does the stabilizer actually replace fat? Not exactly. It suppresses ice crystal growth and helps hold air, which are two of the jobs fat does, so a stabilized lower-fat base gets closer to a high-fat texture than an unstabilized one. What it will not replicate is the coating mouthfeel or the way fat carries certain flavors. Think of it as covering part of the job, not all of it.
Can I freeze half-and-half to keep it on hand? Not recommended. Dairy comes out of the freeze-thaw with the fat separated and a grainy texture, and while that sometimes disappears into a cooked application, it will not disappear into an ice cream base where texture is the entire product.
My ice cream is rich but tastes flat. What happened? Possibly too much fat. It coats the palate and softens the aromatics you are trying to feature, which is why a delicate flavor often reads better in a leaner base. Try dropping a few points of fat and see if the flavor comes forward.

That route only works with heavy cream, since half-and-half will not whip.
